Chipotle Black Bean Soup Mix
Yield: 1 Pint
To make this an “instant” soup, use dehydrated beans. To dehydrate beans, cook them as if you were making them fresh, then dehydrate at 125 F until done.
Ingredients:
1 ½ cup dried black beans
3 Tbs dehydrated corn
1 Tbs chipotle powder
1 Tbs taco seasoning
1 tsp cumin
1 tsp smoked paprika
1 tsp dried oregano
1 tsp garlic powder
½ tsp cayenne(optional for extra kick)
Place all ingredients into a pint jar. Optional: Vacuum seal.
To Make Soup
1 black bean soup jar
6 cups water (or broth of choice)
Directions:
1.Dump the jar into a large saucepot or Dutch oven.
2.Add water or broth. Bring to a boil, and boil for 5minutes.
3.Reduce heat to low, and simmer about 2 hours or until beans are tender. Note: If you used dehydrated beans, reduce the water to
4 cups and simmer for only 25-30 minutes.
