Split Pea Soup Mix
The dehydrated carrots and celery can be diced, sliced, or shredded. Also, you can use freeze-dried vegetables. Freeze-dried vegetables don’t shrink as much as dehydrated, so consider using less—but it’s your soup, so make it how you like it.
Yield 1 pint
Ingredients:
1 ½ cups dried, split green peas
¼ cup dehydrated carrots
3 Tbs dehydrated celery
1 Tbs dried minced onion
1 Tbs dried minced garlic
1 Tbs ham broth powder (or chicken)
1 bay leaf
Place all ingredients into a pint jar. Optional: Vacuum seal.
To Make Soup
6 servings
1 jar split pea soup mix
5 cups water Optional: Cooked, chopped ham
1.Dump the jar mix into a large saucepot or Dutch oven along with 5 cups of water. (Optional: If you want to leave out the ham broth powder, you can use ham broth—or any kind of broth—instead of water here.)
2.Bring to a boil, then reduce heat to low, and simmer about 30 minutes.
3.If desired, add cooked, chopped ham to the last15 minutes of simmering.4.Remove the bay leaf before serving. Season to taste with salt and pepper.
