Smaller recipe of Brown Butter & Herb Peach Cobbler

Ingredients

1 sticks butter (salted)

For Peach mixture:

3-4 cups sliced peaches, fresh, frozen or canned (drain if using canned)

½ – ½ cup brown sugar (use less if you’re using canned peaches, as they are likely already sweetened)

1 tsp. ground cinnamon

¾  Tbs. corn starch or arrowroot (use 1 1/4 TBS if you are finding your fresh or frozen peaches produced a lot of liquid in cooking down)

3 sprigs thyme

For batter:

1cups flour

1cups suger

1cups milk

½  Tbs baking power

½  Tbs vanilla extract

Directions

Preheat oven to 400

Put butter in baking dish into hot oven to brown. This should take about 10 minutes. Keep an eye on it, you don’t want it to burn.

In a pan over medium heat on the stovetop, combine all ingredients for peach mixture. Cook for 7-10 minutes, stirring regularly, until everything is soft and combined. Frozen peaches may need a few extra minutes.

In a bowl, combine the flour, sugar, and baking powder. Stir in the milk until well incorporated. Stir in vanilla.

Remove the baking dish with brown butter from the oven.

First, pour the batter evenly over the butter. No need to stir it.
Next, evenly spoon the peach mixture over the better. Again, no stirring.

Cook for 40-45 minutes in the 400* oven.

*Larger Brown Butter & Herb Peach Cobbler
