Can be served either as a salad, on lettuce, or on split croissants. This recipe uses imitation crab meat, but of course the real thing is always better.
1/2 lb imitation crab meat, shredded
1 cup cooked salad shrimp
1 cup diced celery
1/2 cup mayonnaise, low-fat is okay
1/4 cup sliced whole green onion
1 Tb lemon juice
3 hard-boiled eggs, peeled, chopped
Optional: 2 Tb chopped black or green olives, chopped
Mix all ingredients together.
Refrigerate for at least 1 hour.
