Veg. fry coating for squash and okra or any other vegetable you want to fry.
You can have this recipe or double it. You will be coating the veg. with buttermilk. If out of buttermilk, mix 1Tb per cup of white vinegar into regular milk and it will curdle into buttermilk.
2 C flour
2 TB Arrowroot powder (makes it crispy) or cornstarch
2 tsp baking powder
A bit of salt and pepper
A little garlic powder
Some onion powder
Mix well. Clean veg., cut into frying size you want and soak into 2 cups of buttermilk mixture. Ake sure all veg. are coated well. Transfer veg. into flour mixture.
Coat all pieces with flour mixture.
Either fry now, or flash freeze and bag for later.
Don’t thaw out before frying or it will get mushy. The frozen veg. are fryer ready frozen.
